Let's Work Together

Alright, I WANT your comments. Part of my job that I LOVE is working with people to problem-solve. Whether it's with exercise or food or LIFE, I like being able to help people through critical thinking.

I want to help YOU with your recipe needs. Comment to this post and let me know what one of your favorite foods is. I will do my best to health-ify it for you! One request: Do not ask me to clean up your great-grandmother's chicken soup or your favorite Thanksgiving stuffing. Those types of recipes should be un-touchable and should remain 20s!

  1. I love chicken alfredo but have no idea how to make alfredo sauce healthy and still taste good. Any ideas? Thank you so much!!!

  2. Oooohh. Alfredo sauce is a good one Christina! I think the trick to making any white sauce light AND yummy is chicken broth and Parmesan cheese. That chicken broth will add the same salty flavor that butter usually does!

    Try this:
    1 Tbsp olive oil
    3 cloves garlic, pressed and minced
    2 cups skim milk
    1 cup chicken broth
    3 Tbsp. all-purpose flour
    1/2 tsp salt
    1/4 tsp black pepper
    1/3 cup grated or shredded Parmesan cheese


    In a medium saucepan, heat oil over medium heat. Add garlic and saute until golden brown.

    In a seperate saucepan, stir together milk, chicken broth, flour, salt and pepper over low heat until smooth and thick. Stir into garlic. Continue to cook over medium low heat, stirring frequently, until the sauce is thick. Stir in Parmesan cheese.

    This makes 6-8 servings and one serving contains only 80 calories and 4 g fat!

  5. Hi Lindsay,

    Can you teach me about the glory of spaghetti squash? I don't do it right....no problems with cooking it...just seasoning. I am a vegetarian. I have tried sweet and savory with no luck. I want to like it.....I think! Squash season is coming.

    Also, how do I find a dietician in my area? I need a kick in the butt sometimes. Somewhere between crazy career, getting married and turning thirty I have lost my good habits and have mediocre habits.

  6. Hi Mandy! Thanks for your comments! You DO want to like spaghetti squash! It is so versatile. My favorite way to prepare it is just seasoned with olive oil, salt and pepper and roasted. You can also use it instead of pasta and place a marinara or pesto sauce on it. It is also excellent tossed with olive oil, feta cheese, pine nuts, and arugula. Try purchasing a smaller squash so that the sweet flavor can really come through. Often a larger squash can be bland.
